Defined by a vibrant, city-centered experience, the project introduces a boutique island address that departs from traditional beachfront living in the Caribbean. Rising 10 stories (144 feet) above sea level at 63 Goring Avenue, it brings a new architectural presence to the George Town skyline.

Blending hotel services with residential living, ONE | GT introduces a dual-purpose model tailored to the modern traveler. The development blends 97 condo-style hotel suites with 80 private residences, creating a building that functions as a true neighborhood anchor rather than a standalone hotel. Suites range from one to three bedrooms and include full kitchens, generous living areas, spa-style bathrooms, and private balconies. This dual-purpose model supports long-term residents, visiting professionals, and travelers who want to experience the city beyond the shoreline 

Amenities include ONE | GT Signature Stay Services featuring grocery pre-stocking, a fitness center with Technogym equipment, valet parking, wellness activities, and a shuttle service – creating a stay that feels both elevated and effortless. Positioned within the culinary capital of the Caribbean, ONE | GT introduces three dining concepts under the leadership of Executive Chef René Cahane. Together, they create a layered culinary experience that spans refined dining, elevated rooftop energy, and everyday ritual. 

  • Perle serves as the property’s signature French–Mediterranean restaurant, centered around an open kitchen and a seafood-driven menu rooted in refined technique. A curated wine program reinforces its European sensibility, positioning Perle as a destination for both business dinners and celebratory evenings in the heart of George Town. 
  • Byū, the island’s first rooftop restaurant and bar with an infinity-edge pool, offers panoramic views across Grand Cayman alongside an Asian-inspired menu featuring sushi, sashimi, robata-grilled dishes, and shareable plates. A globally influenced cocktail program and strong sake selection anchor the experience, which transitions at sunset into one of the capital’s most dynamic social scenes. 
  • Café Bellini brings an Italian-inspired bakery and café to the ground level, offering specialty espresso, house-made pastries, and light fare – serving residents, professionals, and visitors with a refined yet approachable daily touchpoint.

Designed by Mike Stroh at Trio Architecture, the property offers a refined take on Caribbean modernism, defined by crisp geometry, natural materials, and a deliberate relationship with light and ocean views. The project has earned three International Property Awards, including Best International Hotel Architecture and Best New Hotel Construction and Design, underscoring its global design significance. 

Interiors by Trio Interior Design and Carolina Hane combine sculptural elements, organic textures, and custom furnishings to create environments that feel immersive rather than decorative. The overall palette fuses urban sophistication with island warmth, striking a thoughtful balance between cosmopolitan vision and Caribbean ease.
