New York Marriott at the Brooklyn Bridge announces the appointment of David Umatum as Executive Chef. A seasoned veteran of the food & beverage industry with over 25 years experience, Chef Umatum will oversee culinary operations at the newly transformed hotel, including The Bar (Greatroom Lobby), the exclusive M Club Lounge, and for events in the hotel’s over 44,000 square feet of meeting space. Chef Umatum most recently served as resort executive chef at The Sea Pines Resort in Hilton Head, South Carolina, where he managed eleven multiple units and oversaw menu creation for the award-winning property. Prior to that, he spent seven years in various executive chef positions for Hilton Hotels, including four years in California as executive chef of Hilton La Jolla Torrey Pines. He has also held tenure at international dining establishments in such cities as London and Paris. Chef Umatum graduated from the famed school Le Cordon Bleu in Paris, France and apprenticed at Bistrot de l’Etoile. He has studied under renowned restaurateurs and chefs including Michelin Star Chef Guy Savoy, Rick Tramonto and Jean Pierre Henry. In his new role, Chef Umatum will spearhead Brooklyn Marriott’s ongoing partnerships with Ovenly Bakery, Brooklyn Roasting Company, Brooklyn Winery and others. Chef Umatum prides himself on using fresh, regionally-grown ingredients to create healthy comfort food with a modern twist in upscale environments such as The Bar. His new menu at The Bar will embrace Brooklyn’s diverse global cultures, featuring tapas and small plates, local pastas and flatbreads. As a child in his mother’s kitchen, Chef Umatum was inspired to enter the culinary world. He was inspired by how food made his family feel and his ability to create meaningful experiences through his dishes. Chef Umatum will continue to tap into his creativity and passion for food to create innovative plates for guests and visitors to Brooklyn Marriott.
