Guillermo CarmonaGuillermo Carmona has been named Executive Chef of Velas Vallarta, an all-inclusive family resort in Puerto Vallarta, Mexico. In his new position, he is responsible for the resort’s three restaurants; poolside snack bar; lobby bar; crepe and ice cream stations, and the Mexican Fiestas held every Sunday. The appointment is effective immediately. Carmona has spent a decade in the food industry, most recently as Executive Chef of AMResorts in the Dominican Republic. Prior to that, he’s spent time in the kitchens of leading hotels in Mexico and the Caribbean, including Le Blanc Spa Resort in Cancun and Zoëtry Agua Punta Cana. Originally from outside Tampico, Mexico on the Gulf Coast, he "accidentally fell in love with gastronomy" in San Antonio, Texas where he spent his early adult years. Upon his return to Mexico, he studied Mexican and French cuisine at Instituto Gastrónomico Corbuse in Queretaro, Mexico, outside of San Miguel de Allende.
