Lance Mion

PM Hotel Group, an award-winning leader in the hotel management industry, today announced Lance Mion as Executive Chef and Drink Lead Enthusiast of the Canopy by Hilton Washington, DC Bethesda North located at Pike & Rose. The Canopy brand offers a fresh, lifestyle experience to its guests through hotel properties that are designed as a natural extension of their neighborhood, delivering thoughtfully, local experiences.

Mion will be responsible for food and drink operations at Canopy Central, the hotel's restaurant, as well as lead the hotel's banquet services. The Canopy offers a variety of private event spaces that can accommodate up to 350 guests in its 5,000 square feet of indoor and outdoor space.

Mion has more than 25 years of food and beverage operations experience which includes creating and launching new restaurant concepts and wine and beverage programs, designing menus, and driving positive results in guest and employee satisfaction.

Mion previously spent 17 years with Starwood Hotels and Resorts Worldwide, Inc. in food and beverage positions at the Westin Georgetown Hotel, St. Regis Hotel, Westin Grand Hotel and the Jockey Club Restaurant. Prior to that, he spent six years as an on-call chef at the White House under Executive Chef Walter Scheib, assisting with state dinners, private dinners for the first family in the residence and other special culinary events.

More recently Mion was the Executive Chef at the Georgetown University Hospital managing the kitchen team for feeding more than 300 patients daily, as well as supervising food operations for three revenue generating outlets and daily, internal catering events.
