Manuel Morales has been appointed as Executive Chef at Banyan Tree Cabo Marques

Banyan Tree Cabo Marques is pleased to announce the appointment of Manuel Morales as executive chef of the AAA Five-Diamond property. Morales will be responsible for leading the food and beverage team, and overseeing the culinary offerings for the resort's five restaurants: Saffron, a signature modern Thai restaurant; the hill-side Las Rocas Bar & Grill which offers fresh seafood and meat cuts; Mexican and Grill restaurant La Nao; and Las Vistas Bar & Lounge.

Bringing almost 20 years of world-class culinary experience to Banyan Tree Cabo Marques, Chef Morales is well poised to oversee the resort's stand-out dining outlets. Morales joins the Banyan Tree Cabo Marques team from sister property, Banyan Tree Mayakoba, where he held the role of executive sous chef for the luxury beachfront resort. Prior to Mayakoba, Morales held roles at Royal Hideaway Playacar in Playa del Carmen as well as the famed Hard Rock Café in 1999. He has also had the opportunity to shadow renowned Chef Enrique Olvera of Pujol in Mexico City.

Having a true passion for the culinary arts, Morales developed his love for food in his mother's kitchen and began his career as a chef at the young age of sixteen. As a culinary veteran with a deep understanding of Mexican culture and the international luxury hospitality space, Morales is a natural fit to lead the food and beverage team at Banyan Tree Cabo Marques.
