Nicholas Leung has been appointed as Executive Assistant Manager, Food & Beverage at Shangri-La Singapore

Shangri-La Hotels and Resorts is pleased to announce the executive appointment of Mr. Nicholas Leung as the Executive Assistant Manager, Food and Beverage at Shangri-La Singapore.

Prior to joining Shangri-La Singapore, Nicholas lived in Hong Kong and was the Director of Operations with Leading Nation Hospitality in Hong Kong, a company operating unique stand-alone concepts. He oversaw the daily operations of its food and beverage venues and worked closely with the owner in driving the guest experience programme as well as executing the contingency plans necessary for the company to pivot during the Covid-19 pandemic.

This British National is no stranger to the hotel industry, having started his career with a 6-year stint with Landmark Mandarin Oriental in Hong Kong, where he held several operational positions within the Food and Beverage division. His passion for the hospitality industry continued when he moved on to Rosewood Hotels Group in 2018, where he served as the Director of Food & Beverage Projects and was responsible for driving the design and development of new food and beverage concepts within the organisation, and oversaw the operations of the Rosewood Hong Kong.

As Executive Assistant Manager, Food and Beverage at Shangri-La Singapore, Nicholas will oversee the hotel's 11 dining concepts, including its One-Michelin starred Shang Palace. Nicholas will also lend his expertise in the hotel's banqueting and catering functions. Working closely with the culinary team, Nicholas will oversee the curation of concepts and manage the commercial strategy of the restaurants, including the hotel's food safety management system.

With a proven track record of successes, from developing restaurant concepts, revamping existing concepts to revenue maximisation and piloting projects, Nicholas has shown great strength in strategic planning and executing effective initiatives to drive growth, innovation and profitability.
