Yvan Didelot has been appointed as Director of Culinary Experience and F&B Operations at Hyatt Regency Aruba Resort Spa and Casino
Hyatt Regency Aruba Resort Spa and Casino, located on 12 acres of magnificent beachfront property on the world-renowned Palm Beach, is delighted to announce the appointment of award-winning Chef Yvan Didelot as its Director of Culinary Experience and F&B Operations. In his role, Didelot will share his talent and experience as both a chef and leader to further elevate the resort's gastronomic and mixology offerings. His primary focus will be to build on the new identity of Ruinas del Mar, the property's signature restaurant, as well as existing and newly designed flavors for both food and tropical beverages throughout all dining venues.
Didelot brings to Aruba over two decades of experience acquired in various culinary meccas such as the Mediterranean Islands, France, Chile, Brazil, Dubai, and most recently, New Orleans. His areas of expertise include hospitality management, food and beverage initiatives, strategic planning, and execution of top-tier cuisine.
Originally from France, Didelot has cooked and studied around the world including in Brazil, Dubai, Mexico, and the United States. He is a Michelin-trained chef, working in several Michelin-starred restaurants such as La Coupole (1* Michelin) and Chateau de la Chevre d'Or (1* Michelin), as well as training under renowned 3* Michelin Chef, Paul Bocuse. He earned his Master Chef of France accreditation in March 2015. Yvan has been part of incredible events such as the Olympic Games in Rio de Janeiro, the Miss Universe pageant, and the Sao Paulo Formula One World Championship.
Outside of the kitchen, Didelot enjoys spending time with his family, traveling, learning new cultures, and exploring local culinary offerings. Aruba will make the perfect home for Didelot who is an avid kite surfer, runner, swimmer, and volleyball player.
