Nicelle Escalona is appointed to lead the food, beverage, and events programs, including the hotel's signature restaurant, The Caledonian. Escalona's career spans notable properties in California, including leadership roles at JW Marriott Desert Springs, The Ritz-Carlton, Rancho Mirage, and most recently, Food & Beverage Operations Manager at the Monterey Marriott. Escalona brings a blend of heart and intentionality to The Caledonian, with a vision that emphasizes elevated warmth and community-focused dining. She is passionate about showcasing local Monterey wines, partnering with nearby farmers markets and vendors, and curating experiences that foster connection.
