Corey Hume has been appointed as Executive Chef at Rosewood Matakauri

Rosewood Matakauri is pleased to announce the appointment of Corey Hume as Executive Chef, marking a new era of culinary excellence for the lakeside resort.

A respected name in New Zealand's fine-dining landscape, Hume joins Rosewood Matakauri with a distinguished career that combines technical mastery, creative innovation, and a passion for mentorship. Most recently, as Culinary Director and Executive Chef at Mount Cook Lakeside Retreat (2023-2025), he crafted menus that were recognized and celebrated by Time Magazine in 2024, as one of the World's Top 100 Places, the only dining experience to be featured in Australasia, utilizing local provenance and storytelling through food, earning acclaim for his refined yet deeply expressive approach.

Prior to that, Hume spent four years as Executive Chef at The Rees Hotel, Luxury Apartments and Lakeside Residences (2019-2023), where his leadership earned him Hotel Management Magazine's "Hotel Chef of the Year - Australasia & Pacific Region" for three consecutive years (2020-2022). His tenure at Blanket Bay Lodge (2011-2019) further cemented his reputation, with the lodge being named New Zealand Winner at the 2017 World Luxury Restaurant Awards under his direction.

Guided by a philosophy of continuous learning and humility, Hume's culinary ethos is captured in his own words: "Always learning and never wanting to stop doing so." He credits his late mentor, Neil MacInnes, for instilling in him the values of dedication and integrity: "Dream big, work hard and stay humble."

As Executive Chef, Hume will guide Rosewood Matakauri's culinary journey into an inspired new chapter, one that celebrates craftsmanship, connection, and the boundless artistry of modern New Zealand cuisine.
