Herve Cuyeu has been appointed Complex Executive Chef at Omni Barton Creek Resort & Spa in Austin

Omni Barton Creek Resort & Spa is pleased to announce Herve Cuyeu as the new complex executive chef. With two decades of extensive experience at acclaimed culinary destinations, Cuyeu will lead the food and beverage program across the resort's nine diverse dining venues and Barton Creek Country Club's venues.
A native of Bordeaux, France, Chef Cuyeu grew up captivated by the unique aromas and flavors that filled his mother's kitchen, developing an early appreciation for the precision required to prepare delicate coastal dishes. His culinary style reflects a commitment to honoring tradition while embracing modern, innovative approaches.
Chef Cuyeu studied culinary arts at the Lycée d'Hotellerie et de Tourisme de Gascogne before coming to Austin. He joins Omni Barton Creek from Omni Scottsdale Resort & Spa at Montelucia, with previous executive culinary leadership across luxury properties, including Waldorf Astoria, Loews Hotels, The Drake Hotel and Sheraton San Diego Resort. Throughout his career, he has led large teams, overseen multimillion-dollar food and beverage operations and elevated guest experiences through innovative menu development, strong financial management and a commitment to high-quality standards. Notable highlights include leading the Michelin-starred restaurant at the Waldorf Astoria Chicago and at the Loews Miami Beach Hotel, where he played an integral role in the success of the very first South Beach Wine and Food Festival.
Chef Cuyeu is known for cultivating collaborative teams and creating culinary programs that reflect both creativity and operational excellence.
Chef Cuyeu will oversee the food and beverage operations across all of the resort's dining venues, including seafood and Texas flavors at Blind Salamander Kitchen & Bar, premium cuts at the nationally renowned Bob's Steak & Chop House, New American sports lounge fare at Crenshaw's Bar & Eatery overlooking the Fazio Foothills golf course, craft cocktails and live music at Jim Bob's Lobby Lounge, Latin-American cuisine at Nopales; classic breakfast at Texas Spice, Austin-inspired dishes and clubhouse fare at Canyons Grill, poolside favorites at Travis Pool Bar & Grill and grab-and-go options at Velvet Joe's Coffee House & Artisan Wares. Country Club venues include Foothills Grille, Foothills Bar, Lakeside Clubhouse (Arnie's Grill & the Overlook Dining Room), The 19th Hole, and Ladies Lounge & Card Room.
