Prince Waikiki, Waikiki's only all-ocean view hotel, has appointed Brooke Tadena as Executive Chef, marking a new era for the property's culinary program and reinforcing its commitment to hyper-local sourcing and sustainable practices that honor Hawaiʻi's natural bounty.

A Honolulu native raised in Wahiawa, Chef Tadena now oversees all food and beverage operations across Prince Waikiki's dining venues and banquet spaces. A graduate of the Culinary Institute of America, his culinary philosophy is rooted in treating high-quality ingredients with precision and respect.

His distinguished career includes formative roles at the Mandarin Oriental's award-winning Hoku's and at the legendary House Without A Key at Halekulani. He later served nearly a decade in leadership roles at Hilton Hawaiian Village and Moana Surfrider before becoming Executive Chef of the Hawaiʻi Convention Center, where he successfully led large-scale culinary operations.

Chef Tadena's appointment further positions Prince Waikiki as a destination for both discerning local diners and global travelers seeking a refined, ingredient-driven take on island hospitality.
