Maurice Copeland has been appointed as Director of Food & Beverage at Prince Waikiki

Prince Waikiki has appointed Maurice Copeland as Director of Food & Beverage, adding more than 30 years of hospitality expertise to its leadership team as the hotel strengthens its culinary and guest experience strategy.

Guided by his "3 C's" philosophy—Consistency, Communication, and Collaboration—Copeland will lead the strategic direction, performance, and guest experience across all of the hotel's food and beverage operations, from poolside cocktails at Hinana Bar to large-scale galas and special events.

Copeland's career spans both national and Hawaiʻi-based hospitality brands. He spent twelve years with Hilton and a decade with Marriott Renaissance in Nashville, before taking on key leadership roles at The Modern Honolulu and Turtle Bay. Most recently, he served as Director of Banquets & Special Events at Four Seasons Hualalai, where he oversaw complex, high-touch events and elevated service standards.

A former aspiring artist with more than a dozen original paintings, Copeland brings a creative eye to the ambience and enjoyment of each guest journey, uniting culinary and design sensibilities.

Together, Copeland's service-driven leadership and Executive Chef Brooke Tadena's culinary mastery position Prince Waikiki to further elevate its reputation as a premier dining and events destination in the heart of Waikiki.
