Enchantment and Mii amo in Sedona have appointed Nathan Byers as Sommelier, further strengthening the destination’s commitment to refined, experience-driven dining rooted in a sense of place.
In his role, Byers will oversee the wine program across both properties, shaping thoughtful pairings and advancing a beverage philosophy designed to complement the region’s high-desert terroir. He joins from Old Edwards Hospitality Group in North Carolina, where he managed beverage operations across multiple venues and played an integral role in evolving the wine and cocktail program.
With a strong foundation in team education and guest engagement, Byers brings a dynamic, service-forward approach to wine that enhances both everyday dining and special culinary moments across Enchantment and Mii amo.
