Dorado Beach, a Ritz-Carlton Reserve is pleased to announce the appointment of Enes Bahcivan as Chef de Cuisine of COA, the resort's signature restaurant renowned for its thoughtful interpretation of Puerto Rico's culinary traditions.

Bahcivan joins Dorado Beach, a Ritz-Carlton Reserve with more than a decade of international culinary leadership experience spanning some of the world's most respected hospitality brands, including JW Marriott, Cheval Blanc (LVMH), Jumeirah, Le Méridien, Fairmont, and Patina Hotels & Resorts. Throughout his career, he has overseen award-winning dining programs across Europe, the Middle East, the Maldives, and the United States, earning recognition for his innovative approach to modern gastronomy, commitment to sustainability, and ability to craft memorable dining experiences rooted in place.

At COA, Bahcivan will lead the culinary vision for one of Puerto Rico's most celebrated dining destinations. Named after the coa, the traditional agricultural tool used by the island's Indigenous Taíno people, the restaurant honors Puerto Rico's rich cultural and agricultural heritage through locally sourced ingredients, seasonal menus, and time-honored cooking techniques. Signature offerings range from traditional dishes such as Sancocho de la Abuela to immersive tasting experiences prepared in Mi Brasa, the restaurant's Spanish wood-burning oven. Guests seeking a more intimate culinary journey can also experience La Cava, COA's private wine cellar, home to more than 690 labels and 3,200 bottles.
