James Fiske has been appointed as Executive Chef at Seaduction Restaurant + Bar and Food and Beverage Manager at Peppers Soul Surfers Paradise

Seaduction Restaurant + Bar, located at Peppers Soul Surfers Paradise, has appointed celebrated chef James Fiske, formerly of Michelin starred establishments across the UK and Europe and the Gold Coast’s Vanitas at Palazzo Versace, as Executive Chef. James, who brings more than 20 years of experience to the role, said achieving Executive Chef at the premier, hatted Seaduction Restaurant + Bar is a career highlight and one which has enabled him to create a bespoke menu that celebrates his international culinary practices. Fusing earth and sea and bursting with fresh local produce, the menu features exquisite combinations of taste and texture, and changes seasonally according to the finest and freshest available product on offer from niche providers around the country. Highlights from the current ‘Earth, Water, Foliage and Vines’ dinner menu include a heirloom beetroot salad with goats curd, orange and nasturtium (entrée), King George whiting with scallop, crab, cucumber and sea herbs (main) and Valrhona chocolate, matcha tea and salted caramel (dessert).

As part of the custom design, an elegant dining room has been situated in the heart of the banquets kitchen allowing clients of Crown Ballroom to receive a unique menu tasting experience. Seating up to 12 guests, the room features glass windows for guests to see the chefs at work.

Craig Dodd has been appointed General Manager, Pullman Palm Cove Sea Temple Resort & Spa. Craig first joined AccorHotels in July 2008, commencing at the Novotel Twin Waters Resort as Executive Assistant Manager. In July 2011, Craig was appointed General Manager at Mount Lofty House, MGallery by Sofitel, before taking on his most recent role in April 2015 as General Manager, Novotel Darwin CBD.
