The €257 Room Service Gap: What 200,000 Orders Tell Us About Hotel F&B Revenue

Most hotels treat room service as a fixed cost centre. The data says otherwise.
SuitePad analysed more than 200,000 real room service orders across 500+ hotels to answer one question. And that is why do some properties earn multiples of what comparable hotels earn from the same department?
The gap is wider than expected. The top 25% of hotels generate €257 per room per year from room service. The median generates €99. That is 2.6 times more, and it is not determined by star rating, location, or brand affiliation. It is set by execution.
What the data shows
Menus are missing their best sellers. Burger sells in 91% of hotels that list it, yet 29% do not offer it. Club Sandwich sells at 84% with a 53% gap. Pizza converts at 83% with a 55% gap.
Basket size is the most underused lever. Moving a guest from one item to two increases order value by 50%. Baskets of five or more items run 262% above a single item order.
Pricing has more headroom than operators assume. A menu price increase of 10 to 15% produced 16.6% more revenue, with no measurable drop in order volume.
Delivery surcharges are pure margin, until they are not. One property introduced a €17.85 service fee and watched monthly orders fall from 87 to 5.
Speed decides whether the order happens at all. The fleet median response time is 2.4 minutes. Slower properties lose three times more orders to declines.
Discovery and conversion fail together. 39% of hotels have a problem on both dimensions at once. Only 34% perform well on both.
