Nevin’s journey is a masterclass in culinary excellence, beginning as a 15-year-old kitchen porter in his native Maynooth before honing his craft at legendary institutions like Ballymaloe Cookery School, The Shelbourne, and London’s two-starred The Hand and Flowers. Most recently, he led Carton House’s The Morrison Room to its first Michelin star in February 2025. When Glovers Alley reopens, guests can expect a stunningly refreshed interior paired with a bold, new menu defined by Chef Nevin’s signature local flair and cooking rooted in classical technique.
