Olivier Thomas has been appointed as General Manager at Hotel de Paris Monte-Carlo

Olivier Thomas began his career in 1997 at the Westin Palace in Milan as Food & Beverage Director. Then he held the same position at the Savoy in London from 2000 to 2001.

Shortly after, he was appointed executive assistant manager of the Westin Excelsior in Rome for three years (2002-2005). Mr. Thomas then landed his first position as hotel manager at the St Regis Hotels & Resorts in New York (2005-2008). He collaborated in particular with Alain Ducasse, who is also the chef of the Louis XV restaurant at the Hôtel de Paris Monte Carlo, whose table is crowned with three Michelin stars.

After these eight years of responsibility within Starwood Hotels & Resorts, a long sequence of almost fifteen years at Four Seasons began in 2008. Olivier Thomas was first director of the Fours Seasons hotel in Prague in the Czech Republic (2008-2010). Then that of Aman in Jordan (2010-2014).

In 2014, he won his first title as general manager of the Four Seasons in Casablanca, from its opening until 2017.

His career then took him to the United Arab Emirates from November 2017 to April 2023. The Canadian group again entrusted him with general management, that of the ultra-modern Four Seasons in Abu Dhabi at Al Maryah Island.
