With over 16 years of experience pushing the boundaries in the culinary world, Chef Collins will serve guests and locals alike flavorful California cuisine at the hotel's picturesque restaurant, SALT. Collins' passion for cooking started in the kitchen working alongside his uncle at the Ocean Trail Golf Course in Rancho Palos Verdes as a line cook. Prior to Marina del Rey Hotel, Collins made stops at Baltaire, Wolfgang Puck at Hotel Bel Air, Gordon Ramsey at The London West Hollywood, Thomas Keller at Bouchon Beverly Hills, and Alain Giraud of Anisette, learning from some of the industry's most talented and esteemed chefs. Collins has a bachelor's degree from The Art Institution of California, Los Angeles where he graduated with honors.
Chef Coenen spent the earlier years of his career honing his skills at luxury properties around the country, namely The Ritz Carlton in St. Thomas, U.S. Virgin Islands and The Inn at Palmetto Bluff in Bluffton, South Carolina. Soon after, Coenen moved to Chicago where he continued to enhance his culinary expertise starting at one Michelin starred Boka Restaurant in 2010. During his nine years in the Windy City, Coenen served as Executive Chef at The Gage Restaurant and later the Chicago Athletic Association Hotel, where he oversaw all operations of the hotel's four food and beverage offerings, including his fine dining restaurant, Cherry Circle Room, a James Beard Awarded restaurant, as well as two freestanding restaurants as the company's Corporate Executive Chef. Coenen's renowned flavors and success earned him recognition in 2018, earning a StarChefs "Rising Star Chef" award. Under the oversight of Coenen, Michelin recognized his work at Lonesome Rose with a Michelin Bib Gourmand in 2018 within one year of its opening.
Previously, Kristin partnered with Marriott International from 1997-2005, rose through positions and embarked in a career in Event Management. Kristin had worked previously with the Marriott Marina del Rey location for five years.
Sheets an 11 year veteran with The Ritz-Carlton Hotel Company, joins the Marina del Rey team from The Ritz-Carlton Hotels of Atlanta, where he negotiated national corporate contracts and managed high-profile business relationships. During his tenure at The Ritz-Carlton Hotels of Atlanta, Sheets successfully managed an average of 90 national accounts, representing both the Buckhead and Downtown Atlanta hotels; an inventory of 997 keys. Sheets is also an ambassador of The Ritz-Carlton Leadership Center and a certified speaker for the company. Prior to joining The Ritz-Carlton, Sheets held the rank of Platoon Sergeant in The United States Marine Corps. A native of North Carolina, Sheets attended Barton College and holds a Bachelor of Fine Arts degree in Communications and the Arts.
