Renald worked at Alain Ducasse's luxurious es tablishments such as Le Louis XV in Monte Carlo, The Spoon Food & Wine in Paris and La Bastide de Moustier in South of France. He has also worked in many other famous restaurants including Citrus Etoile, Bar & Boeuf and II Cortile before moving to Qatar as a private chef for the ambassador of France.In 2013, Renald landed in Dubai to join the Burj Al Arab team to head-up Al Mahara, the acclaimed seafood fine dining restaurant before being promoted to executive sous chef, a role, he held for two years before moving to the sister property Jumeirah Al Naseem to be part of the pre-opening team. He then joined Atlantis, The Palm in the same capacity to experience a large-scale food and beverage operations.In his new role, Renald will oversee Fairmont Dubai's 10 food and beverage outlets including the multi-award winning restaurants Noire and The Exchange Grill.
Messian, a French national, joins from the The Ritz-Carlton Toronto, where he held a similar position. He will now work closely with general manager, Martin Cramer, who has been at Emirates Palace since 2018.

German national Schiller has more than 26 years' hospitality experience, working across the Middle East and Africa in countries including the UAE, Egypt, Nigeria and the Kingdom of Saudi Arabia, among others. He was previously cluster general manager of Hilton Abu Dhabi and Hilton Al Ain. Schiller graduated from the Dr. Speiser Hotel Management School and also has a Kitchen Apprentice Degree in Culinary Skills. He began his journey in the hotel industry in 1989. He joined the Hilton family in 2008 as director of operations for Hilton Alexandria Green Plaza in Egypt, and joined the Hilton Abuja in Nigeria in 2012. Moving to Saudi Arabia next, he took on the role of cluster general manager of Doubletree by Hilton Riyadh - Al Muroj Business Gate and Hilton Garden Inn Riyadh Olaya in 2014. In 2016, he added the Doubletree by Hilton Dhahran to his portfolio. Following his stint in Saudi Arabia, Schiller moved to UAE as cluster general manager for Hilton Abu Dhabi and Hilton Al Ain.
