Shaner Hotels Announces Grand Opening of 105-Room Fairfield Inn & Suites Daytona Beach Speedway/Airport

The Shaner Hotel Group, one of the hospitality industry"s leading owner-operators of full- and select-service hotels, today announced the grand opening of the 105-room Fairfield Inn & Suites Daytona Beach Speedway/Airport. The hotel is owned by a joint venture comprised of Prime Hospitality Group, the International Speedway Corporation (ISC) and Shaner. Shaner also will operate the property.

Louis Escoto has been appointed as Director of Sales and Marketing at Washington Park Hotel

​With over 15 years as a hospitality and sales professional in South Florida, Louis Escoto brings substantial local and regional relationships that will prove vital in his role at Washington Park Hotel. As Director of Sales and Marketing, Escoto will be responsible for driving guestroom sales in the leisure and corporate segments as well as managing relationships with the hotel’s robust portfolio of likeminded amenity partners, including Martone Cycling and Beekman 1802. Most recently, Escoto served as Director of Sales and Marketing of Intercontinental Hotels Group’s Z Ocean Hotel, where he led the property to the highest annual ADR of all IHG branded hotels in the Americas. Escoto was Area Director of Sales at SBE Miami, where he was pivotal to the pre-opening brand development of the SLS South Beach and The Redbury hotels, along with the rebranding of the Raleigh Hotel. He also held various executive sales positions with Goldman Properties, where he represented both The Park Central Hotel and Gansevoort Hotel Miami.

Gabriel Perez has been appointed as General Manager at Washington Park Hotel

Gabriel Perez brings extensive experience in branded, independent, historic boutique hotels, resort settings, condo hotel operations, and new build pre-opening projects. As General Manager of Washington Park Hotel, he is responsible for driving overall operations and guest satisfaction of the hotel’s 181 guestrooms, signature restaurant Employees Only, and tropical cocktail bar, Swizzle. Perez will utilize his vast network to expand upon the hotel’s thoughtful array of on-brand programming, which includes a rotating photography program, as well as building community relations. Previously, the 30-year hospitality veteran served as General Manager at the TRYP Maritime Hotel in Ft. Lauderdale, Florida, the third U.S. outpost of Wyndham’s select-service TRYP brand. He has also held General Manager positions at the Hyatt Place in West Palm Beach, the Hyatt Place Meadows Casino in Pittsburgh, and the Montauk Blue Hotel in the Hamptons.

Caleb Hulsey has been appointed as Sous Chef at The Perry Hotel Key West at Stock Island Marina

Hailing from South Carolina with more than nine years of culinary experience, Sous Chef Caleb Hulsey has extensive kitchen experience, having worked at a number of restaurants in the Carolin as. At both Bamboo and Atlanticville restaurants in Charleston, he worked his way up the ranks from line cook to sous chef and was responsible for training and managing the kitchen team, creating schedules, overseeing inventory, and ordering.

Kalen Fortuna has been appointed as Executive Chef at The Perry Hotel Key West at Stock Island Marina

Executive Chef Kalen Fortuna grew up on a small island off the coast of Charleston, South Carolina. The avid fisherman and water enthusiast developed a passion for southern coastal cuisine as a child, learning how to fish and prepare all types of seafood. Fortuna began his culinary career at the young age of 15 under the tutelage of critically acclaimed chefs at Relais & Châteaux Properties. At the age of 19, after training under chefs Robert Carter and Graham Daily at Charleston’s renowned Peninsula Grill, he got his first sous chef position and helped open Crave Kitchen in Mount Pleasant, South Carolina. After furthering his skills in kitchens at top South Carolina restaurants, Heirloom Eats and Hucks Lowcountry Table, Fortuna worked with Belie as chef de cuisine at Little Palm Island Resort & Spa.

Miller previously led operations at other Ocean Properties Hotels, Resorts & Affiliates, including Treasure Island Beach Resort in Treasure Island, Fla. and Sanibel Island Beach Resort in Sanibel, Fla. and worked for the Peabody Hotel Group in Memphis, Tenn., where he managed their restaurant and catering planning, garnering a prestigious Forbes’ 4-star rating. David Ferrier has been appointed as Director Of Food And Beverage at Waldorf Astoria Key West

Waldorf Astoria Key West announces the appointment of David Ferrier as director of food and beverage for Casa Marina and The Reach Resorts. With more than 16 years of hospitality experience, Ferrier manages the culinary program for both resorts including 15,000 square feet of event and banquet space, Casa Marina’s Sun Sun, RUMba rum bar, and Spencer’s by the Sea at The Reach. Most recently, Ferrier served as the director of restaurants overseeing the management, hiring, and training of four food and beverage outlets at ARRIVE Palm Springs in California.
