Kai Autenrieth has been appointed as Executive Chef at Four Seasons Resort Rancho Encantado

Four Seasons Resort Rancho Encantado, set among 57 acres and located 10 minutes from downtown Santa Fe, announces the appointment of Kai Autenrieth as Executive Chef. In his first Executive Chef role in the U.S., Autenrieth oversees the resort’s complete food and beverage operation, including Terra restaurant, one of Santa Fe’s premier dining destinations serving contemporary American cuisine while incorporating New Mexican influences, along with the in-room dining menu for the 65-casita resort and the resort’s popular Chef’s Garden Table. Chef Autenrieth brings a distinct global perspective and command of international flavor profiles to his menus at Four Seasons Resort Rancho Encantado building upon a culinary trajectory of 19 years that has traversed Tanzania, Saint Lucia, Australia, St. Maarten, Bermuda and the U.K. Most recently Chef Autenrieth was Executive Sous Chef at Four Seasons Resort Nevis in the West Indies where he spent three and a half years honing his skills in fine dining with a special focus on locally-sourced seafood and hands-on guest experiences such as diving for lobsters followed by interactive cooking classes. Chef Autenrieth’s extensive knowledge and training in a number of cuisines including European, South American, Caribbean, Asian and African will be on display as he merges his global take with regional ingredients including corn, honey, chilies and more to create a locally driven menu while paying tribute to New Mexican culinary traditions and Southwestern influences. The resort’s herb and vegetable garden is also a source of inspiration, which will serve as the location of Terra’s popular seasonal Chef’s Garden Table offering a dynamic dining experience for guests. Some of Chef Autenrieth’s favorite dishes include the Surf & Turf Carpacio starter with octopus, citrus infused extra virgin olive oil and beef tenderloin served with an herb salad, Bone in Beef Short Rib with green chile polenta, baby spinach, cured cherry tomatoes and gave glaze and the Cedar Roasted Corvina with chorizo and wild rice cake, grilles rainbow carrots and golden beet gastrique. Furthermore, his global perspective epitomized in such dishes as the new Caribbean meets New Mexico Jerk Seasoned Prime Rib of Angus Beef with hatch chile steak sauce, wild mushrooms and green beans, while a seasonal mulled wine with local spices was inspired by his childhood in Germany. His curiosity and love of food began as a child where he foraged for mushrooms in the forests outside of Munich. He attended culinary school in Bad Wörishofen, Germany and his first professional experiences were as a pastry chef in Switzerland. Chef Autenrieth is joined by his wife and child in Santa Fe where they are eager to explore the destination’s unique landscapes, art and culture.

Meredith Macfarlane has been appointed as General Manager at Four Seasons Resort Rancho Encantado Santa Fe

Four Seasons Resort Rancho Encantado Santa Fe announces the appointment of new General Manager Meredith Macfarlane, replacing Cindy Racco. Having opened Four Seasons in Santa Fe in 2012, Racco is transferring to Four Seasons Resort Hualalai at Historic Kaʻupulehu in Hawaii. After holding the position of Hotel Manager at one of the most glamorous properties of Four Seasons, Beverly Wilshire in Beverly Hills, Meredith Macfarlane is thrilled to venture to the "Land of Enchantment," New Mexico. “Steeped in history, Santa Fe intrigues me with its blend of Native American and Spanish cultures," she says. "I am excited to experience all that northern New Mexico has to offer, from hiking to skiing and the arts."

Douglas Libby has been appointed as General Manager at Eldorado Hotel & Spa

Doug was most recently the regional director of sales and marketing for Heritage Hotels & Resorts overseeing five of Heritage's properties in northern New Mexico. Prior to that, Doug was director of sales and marketing for the Eldorado Hotel & Spa for four years. Doug launched his career with Marriott International, and has held similar positions across the country with Hilton Hotels, Westin, Starwood and Interstate Hotels.

Tiera Steele has been appointed as Director of Revenue Management at Eldorado Hotel & Spa

Benchmark Resorts & Hotels has appointed Tiera Steele director of revenue management for the Eldorado Hotel & Spa. The property is a Benchmark Hotel located in the heart of Santa Fe, New Mexico. Kim Nugent, Benchmark’s vice president revenue management, made the announcement. Tiera Steele was most recently director of revenue management for the Arizona Golf Resort & Conference Center in Mesa, Arizona. Previous to this she was owner of H Solutions, a Revenue Management Consulting business based in Phoenix. Ms. Steele has served in revenue management positions for much of her professional career for both hotel management companies and independent properties in California and Arizona. Ms. Steele attended Orange Coast Community College. She resides in Santa Fe.

Thomas Humphrey has been named Food & Beverage Manager at Rosewood Inn of the Anasazi

A seasoned veteran of the luxury hospitality industry, Humphrey joins Rosewood with over 20 years of food and beverage experience. Most recently, he served as Food and Beverage Manager at the Four Seasons Hotel Westlake Village in California, a property which he helped launch in 2006. Humphrey began his diverse career in food and beverage in Santa Barbara, California at El Encanto Hotel, followed by San Ysidro Ranch, before joining the Four Seasons Olympic Hotel in Seattle, Washington. From 2002-2006, Humphrey led the culinary team at the Four Diamond rated Park 75 Restaurant at the Four Seasons Hotel Atlanta, where he served as Director of Restaurants. Following his position with the Four Seasons Atlanta, Humphrey was Director of Restaurant Operations at Hotel Bel Air.

Andrew Cooper has been appointed as Executive Chef at Four Seasons Resort Rancho Encantado

Andrew Cooper has been appointed Executive Chef at Four Seasons Resort Rancho Encantado Santa Fe, joining the team from the Resort’s sister property, Four Seasons Resort Hualalai at Historic Ka’upulehu. With more than 20 years of experience around the globe, Cooper’s diverse resume includes a wealth of culinary expertise in a variety of cuisine styles. A graduate of the esteemed Culinary Institute of America, Cooper brings more than 12 years of Four Seasons experience to his new role as Executive Chef at Four Seasons Resort Rancho Encantado.

Beth Allen has been appointed as Director of Sales & Marketing at Rosewood Inn of the Anasazi

Prior to joining Rosewood Inn of the Anasazi, Ms. Allen held diverse positions with some of the world’s most prestigious hotel groups, including The Ritz-­‐Carlton Hotel Company, Four Seasons and Rosewood Hotels & Resorts. Most recently she served as Director of Sales and Marketing for The Mansion on Peachtree, A Rosewood Hotel in Atlanta, Georgia. During her tenure, Ms. Allen was the recipient of Rosewood Hotels & Resorts 2010 Sales &Marketing Special Achievement Award.

Cindy Racco has been appointed as General Manager at Encantado Resort

Four Seasons Hotels and Resorts has signed a long term management agreement with the owners of Encantado, an acclaimed resort in Santa Fe, New Mexico, to operate it as a Four Seasons resort. Following a short transition period, the property will be renamed Four Seasons Resort Rancho Encantado Santa Fe in the coming weeks. Effective immediately, Cindy Racco is appointed General Manager of Four Seasons Resort Rancho Encantado Santa Fe. The 14-year Four Seasons veteran joins the team from the historic Four Seasons Resort The Biltmore Santa Barbara in California, where she was Resort Manager.
